- 8-10 oz chicken breast or chicken tenders, cut into cubes
- 1 heaping teaspoon smoked paprika preferred or chili powder
- 1 teaspoon ground cumin
- ¼ heaping teaspoon salt
- 3 heavy dashes ground black pepper
- 1 tablespoon cooking oil
- 1 tablespoon unsalted butter melted
- 1 onion thinly sliced
- 1 bell pepper red, yellow, or green, thinly sliced
- 1 tablespoon fresh lime juice or more to taste
- Cilantro for garnishing
Combine the chicken breast, smoked paprika, cumin, salt, and black pepper in a bowl. Mix well and let it marinate for 10 minutes.
Heat a cast-iron skillet over medium heat. Add the oil and butter, then add the onions. Cook and stir until the onions are softened, fragrant, and caramelized.
Add the marinated chicken to the skillet with the onions. Stir well to combine and cook until the surface of the chicken turns opaque.
Toss in the bell peppers and stir well to combine. Cook until the chicken is cooked through and the bell peppers are slightly softened. Pour in the lime juice and stir well to combine. Serve immediately in the hot skillet to keep it sizzling, and garnish with cilantro.
