Smashed Cucumber Salad - Sichuan-style cucumber salad tastes refreshing, crunchy and absolutely flavorful with a tingly spicy salad dressing. This easy and quick smashed cucumber salad recipe makes a mouthwatering appetizer in just 10 minutes.
Wash and slice off the ends of the cucumbers on a cutting board. Place the side of the knife against the cucumber and gently smash it with your palm until it splits. Then, cut into 1/2-inch (1 cm) thick pieces and transfer them to a large bowl.
Prepare the salad dressing by combining soy sauce, vinegar, sugar, spicy chili crisp, sesame oil, roasted sesame seeds, and salt in a small bowl. Stir until the sugar and salt are dissolved, then set aside.
Top the smashed cucumber pieces in a large bowl with minced garlic, chopped scallions, red Thai pepper, and chopped cilantro. Toss well with the prepared salad dressing.
Transfer to a serving dish and serve immediately.
