- 2 tablespoons oil
- 1/4 small onion finely diced
- 3 cloves garlic minced
- 10 oz (280g) ground chicken
- 1/2 cup whole roasted cashew nuts
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon chopped cilantro leaves
- 1 head butter lettuce
Sauce:
- 3 tablespoons Thai sweet chili sauce
- 2 teaspoons lime juice
- 1 tablespoon chopped cilantro leaves
- Pinch white sesame seeds
Mix all the ingredients for the sauce in a small bowl and stir to combine well. Clean the butter lettuce by peeling each leaf off the stem and set aside.
Heat a wok or skillet over medium heat and add the oil. Once the oil is hot, add the onion and garlic, and stir-fry until slightly browned. Add the ground chicken, stirring continuously with a spatula to break up any lumps. Then, add the cashew nuts, fish sauce, and sweet soy sauce, and stir to combine well.
Continue to cook until the filling is dry but still moist. Add the cilantro and turn off the heat.
To assemble the lettuce wraps, place 1 tablespoon of the filling in the center of a butter lettuce leaf and top with some sauce. Wrap it up and enjoy immediately.
