Thai Chicken Lettuce Wraps

Ingredients

  • 2 tablespoons oil
  • 1/4 small onion finely diced
  • 3 cloves garlic minced
  • 10 oz (280g) ground chicken
  • 1/2 cup whole roasted cashew nuts
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon chopped cilantro leaves
  • 1 head butter lettuce

Sauce:

  • 3 tablespoons Thai sweet chili sauce
  • 2 teaspoons lime juice
  • 1 tablespoon chopped cilantro leaves
  • Pinch white sesame seeds

Instructions

  • Mix all the ingredients for the sauce in a small bowl and stir to combine well. Clean the butter lettuce by peeling each leaf off the stem and set aside.
  • Heat a wok or skillet over medium heat and add the oil. Once the oil is hot, add the onion and garlic, and stir-fry until slightly browned. Add the ground chicken, stirring continuously with a spatula to break up any lumps. Then, add the cashew nuts, fish sauce, and sweet soy sauce, and stir to combine well.
  • Continue to cook until the filling is dry but still moist. Add the cilantro and turn off the heat.
  • To assemble the lettuce wraps, place 1 tablespoon of the filling in the center of a butter lettuce leaf and top with some sauce. Wrap it up and enjoy immediately.
