Servings: 3 people
- 4 skinless and boneless chicken thighs about 12.35 oz/375g
- 2 cloves garlic minced
- 1 heaping tablespoon chipotle paste smokey flavor preferred
- ½ teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon salt
- 3 heavy dashes ground black pepper
- 2 tablespoons lime juice
- 2 tablespoons olive oil
Pat the chicken dry and trim off any excess fat. Add the chicken and minced garlic to a bowl and mix well. You can also use your hands if you prefer to work the garlic into the chicken.
Add the chipotle paste, chili powder, ground cumin, dried oregano, salt, pepper, and lime juice. Mix until the chicken is evenly coated.
Drizzle in the olive oil and mix well. Cover and marinate in the refrigerator for 30 minutes to 1 hour.
Arrange the chicken in a single layer in the air fryer basket without overlapping. Spoon the remaining marinade over the chicken. Air fry at 375°F (190°C) for 12 minutes, then flip and cook for another 4 minutes, or until cooked through.
Transfer the chicken to a cutting board and let it rest briefly before slicing into cubes. Serve with my Tomato Salsa and Cilantro Lime Rice.
