Chipotle Chicken Copycat Recipe
In my Tomato Salsa post, I mentioned that I would be sharing the chipotle chicken I served with it. Here it is! Chipotle has been getting more attention in Asia lately, especially with the opening of its first Asian restaurant in Seoul, South Korea, in September 2026. The brand is also expected to open its first Singapore location in 2027. I wanted to make my own version of its smoky, flavorful chicken at home, so I developed this copycat Chipotle chicken recipe.
Many copycat recipes use canned chipotle peppers in adobo sauce, but I prefer using smoky chipotle paste. I find it easier to work with because I can mix it straight into the marinade without having to chop or blend the peppers. I also like that I can use just the amount I need instead of opening a whole can. The paste gives the chicken the deep, smoky flavor I’m looking for, which is exactly what I want in this recipe.
My version is made in the air fryer, but if you prefer another cooking method, check out my Other Ways To Cook section below for more options.
Ingredients You’ll Need

- Chicken thighs
- Chipotle paste
- Chili powder
- Ground cumin
- Dried oregano
- Lime juice
- Olive oil
See the recipe card below for all the ingredient details and exact measurements.
Pro Tip #1: Why I Use Chicken Thighs
I use boneless, skinless chicken thighs because they stay juicy and tender in the air fryer. You can use chicken breasts, but watch the cooking time closely so they don’t dry out.
Pro Tip #2: Use Smoky Chipotle Paste, Not Just Heat
I prefer a smoky chipotle paste because I want that deep, earthy smokiness in the chicken, not just chili heat. It’s what gives this copycat recipe its signature Chipotle flavor. Choose a paste with a pronounced smoky taste rather than one that’s simply hot.
Pro Tip #3: Fresh Garlic Over Garlic Powder
I use freshly minced garlic instead of garlic powder because it gives the marinade a stronger, fresher garlic flavor. It also adds a savory depth that works well with the chipotle and spices.
Pro Tip #4: Ground Cumin For That Earthy Flavor
Ground cumin adds a warm, earthy flavor that works particularly well with chipotle. I wouldn’t leave it out because it helps give the chicken that familiar Mexican-inspired seasoning.
Pro Tip #5: Fresh Lime Juice To Balance The Smokiness
Fresh lime juice adds acidity that cuts through the smoky, savory marinade and keeps the flavor from tasting too heavy. I prefer freshly squeezed lime juice over bottled juice.
Pro Tip #6: Olive Oil Helps The Seasoning Stick
I drizzle olive oil into the marinade to help the chipotle paste, garlic, and spices coat the chicken evenly. It also helps seal in the seasonings and gives the chicken a nicely browned exterior in the air fryer.
How To Make Chipotle Chicken

Start by patting the chicken thighs dry with paper towels and trimming off any excess fat. Add them to a bowl with the minced garlic and give everything a good mix. You can use your hands here to work the garlic into the chicken.
Pro Tip: Drying the chicken helps prevent excess moisture from diluting the marinade. It also gives the seasonings a better surface to cling to.

Next, add the chipotle paste, chili powder, ground cumin, dried oregano, salt, black pepper, and lime juice. Mix everything together, making sure the chipotle paste is worked into the chicken rather than left in little clumps.

Now drizzle in the olive oil and mix again. Cover the bowl and let the chicken marinate in the refrigerator for 30 minutes to 1 hour.

Arrange the chicken in a single layer in your air fryer basket, leaving a little space between the pieces. Spoon any leftover marinade over the top. Air fry at 375°F (190°C) for 12 minutes, flip, and cook for another 4 minutes, or until cooked through.
Pro Tip: If your air fryer basket is small, cook the chicken in batches. Overcrowding traps moisture and can prevent the chicken from browning properly.

Once cooked, transfer the chicken to a cutting board and let it rest briefly before slicing into cubes. Serve it with my Tomato Salsa and Cilantro Lime Rice.
Pro Tip: Let the chicken rest for a few minutes before slicing. This helps keep the juices in the meat instead of losing them onto the cutting board.
Other Ways To Cook

- Oven-Baked: If you don’t have an air fryer, the oven works just as well. Preheat to 400°F (200°C) and arrange the marinated chicken in a single layer on a lined baking sheet. Bake for 18-20 minutes, flipping halfway through, until cooked through.
- Grilling: For a little char and extra smoky flavor, cook the chicken on an outdoor grill or grill pan. Preheat to medium-high heat and lightly oil the grates. Grill the thighs for about 5-7 minutes per side, depending on thickness, until cooked through. Let the chicken rest briefly before slicing.
- Pan-Frying: You can also cook the chicken on the stovetop. Heat a little olive oil in a skillet over medium heat, then add the chicken in a single layer. Cook for about 5–7 minutes per side, depending on thickness, until cooked through. Work in batches if needed so the chicken has room to brown rather than steam.
Pro Tip: How To Tell When The Chicken Is Done
The most reliable way is to use an instant-read thermometer. Chicken is done when the thickest part reaches 165°F (74°C). If you don’t have a thermometer, cut into the thickest piece. The meat should be opaque all the way through, with no pink in the center, and the juices should run clear.
Frequently Asked Questions
I don’t recommend it because the lime juice can affect the texture of the chicken if left too long. For the best results, marinate for 30 minutes to 2 hours. If you want to prep ahead, mix the marinade separately and refrigerate it until you’re ready to use it.
Let the chicken cool, then transfer it to an airtight container and refrigerate for up to 3–4 days. For longer storage, freeze it in a freezer-safe container or bag for up to 3 months.
Reheat the chicken in a skillet over medium-low heat with a little olive oil. Stir occasionally until heated through. Avoid using high heat, as it can dry out the chicken.
Yes! The chicken is great in tacos, burritos, quesadillas, wraps, and salads. It’s also delicious tucked into a rice bowl with your favorite toppings.
