Last weekend, I went to a birthday party with Chipotle catered foods. I just couldn’t get enough of the cilantro lime rice, topped with juicy chicken, steak and salsa.
The next day, instead of going to Chipotle and got my fix, I decided to just make the rice at home.
As the name suggested, this steamed white rice is flavored with lots of fresh cilantro leaves, zesty lime juice, butter and salt. I dressed up the flavors with some chicken broth.
I also love it that everything is cooked in one pot, so there is only one utensil to wash.
The end result is absolutely delicious, refreshing and appetizing. The rice is moist, with the wonderful aromas of the cilantro. I served the cilantro lime rice with sizzling chicken fajita and tortilla.
Making Mexican food is a breeze and we all enjoyed the meal very much!

Cilantro Lime Rice Recipe
Cilantro Lime Rice - easy and delicious one-pot rice with cilantro, lime juice and butter. This Mexican-inspired rice is better than Chipotle.
- 2 cups long grain rice
- 1 cup water
- 1 1/4 cups chicken broth
- 1/4 teaspoon salt
- 3 tablespoons melted unsalted butter
- 1/4 cup chopped cilantro leaves
- 4 tablespoons fresh lime juice
Rinse the rice thoroughly with cold water and drain, repeat for 3-4 times until the water runs clear. Transfer the clean rice into the skillet and add 1 cup clean water, chicken broth, salt and butter to the rice. Cover the lid and cook on medium heat for 15 minutes, or until the water is dry and the rice is cooked through. Turn off the heat, add the cilantro leaves and lime juice to the rice. Stir and loosen up the rice and mix well with the cilantro leaves and lime juice. Serve warm.
