Divide the dough into equal portions.
Roll each portion into a smooth ball.
If you’re making Peanut Dumplings, portion the peanut filling into small balls as well. If you’re making Black Sesame Dumplings, you don’t need to pre-roll the filling. You can just use a spoon or chopsticks to scoop a small amount when filling since it’s softer and easier to portion. Take one dough ball and flatten it gently with your palm. Then use your fingers to press and pinch the edges outward, rotating as you go, until you get a small round wrapper.
Place the filling in the center of the wrapper.
Carefully bring the edges together and pinch to seal tightly, making sure there are no cracks so the filling doesn’t leak out while cooking.
Gently roll it between your palms again to form a smooth ball. Repeat with the remaining dough and filling.
Once they’re ready, boil the tang yuan in water. When they float to the top, remove them and serve with Sweet Ginger Soup.
