- 1 lb (500g) shrimp peeled and deveiled, tail-on preferred
- 1 1/2 tablespoons homemade dry rub or 1 tablespoon Old Bay Seasoning
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 tomato diced
- 1 cup beer
- 1 tablespoon parsley chopped
Rinse the shrimp under cold running water and pat them dry with paper towels. Season with homemade dry rub and set aside.
Heat a skillet over high heat and add the olive oil. Sauté the garlic until aromatic but not browned, then add the tomatoes and shrimp. Stir to combine well. As soon as the shrimp turn opaque, add the beer.
Bring the beer to a quick boil, and once the shrimp are cooked through, turn off the heat and add the parsley. Stir to combine well and serve immediately.
I strongly recommend you to try the homemade dry rub. Make and store in a spice jar and you can use it on all kinds of proteins.
