Rock sugar can be found in either yellow or white crystals but I prefer the yellow variety. The taste is sweet yet subtle and I use it to make the Chinese steamed fish sauce, which imparts a deeper flavor than regular sugar. Rock sugar keeps forever in the pantry or refrigerator. If you live in a damp and humid place, it’s best to store them in the refrigerator.
