Shaoxing wine is an amber-hued Chinese rice wine produced in the town of Zhejiang province of China. It has a low alcohol content and is great for marinating protein.

When added to sauces, it imparts a hint of alcohol flavoring. If a recipe calls for Chinese rice wine, you can use Shaoxing wine. Dry sherry is a great substitute for it.
