You may use either active dry yeast or instant yeast for this recipe. When using active dry yeast, make sure to dissolve it in the water before adding it to the dry ingredients. For instant yeast, you can directly add it to the flour when combining the ingredients.
  • Olive oil: It’s an essential ingredient for Italian cuisine. It adds a rich flavor to the bread and keeps it moist once baked.
  • Warm water: Dissolve the active dry yeast in the warm water, then mix it into the flour to create a soft dough. Make sure the water temperature is warm enough to touch. Do not use hot boiling water, which will kill the yeast.

How To Make Italian Puff Bread

The best Italian puff bread takes only 10 times for active preparation.

After proofing for 12. hours, the dough becomes soft and more elastic.

First, dissolve the active dry yeast in warm water and mix well with salt and olive oil. Combine the wet and dry ingredients in a large mixing bowl. Knead the dough with a stand mixer until it forms a smooth dough. Next, cover the dough with plastic wrap and refrigerate it for 12 hours to allow it to rise.

Place the shaped dough onto a baking sheet.

When you’re ready to bake, preheat your oven to its highest temperature (about 320°C/608°F). Remove the dough from the refrigerator 30 minutes before baking. Divide the dough into 4 equal portions. Gently shape each portion into a large disc about 5 mm thick and sprinkle semolina on top. Transfer the dough discs to a baking sheet and place them in the oven. Ingredients  

  • 2 teaspoons (6g) active dry yeast
  • 1 tablespoon salt
  • 3 1/2 tablespoons (33g) olive oil
  • 1 1/2 cups (300ml) warm water
  • 4 1/2 cups (500g) 00 flour or pizza flour
  • 1/4 cup (25g) semolina

Instructions 

  • Whisk together the active dry yeast, salt, olive oil, and warm water in a measuring cup or a small bowl.
  • Add the flour to a large mixing bowl and pour the olive oil mixture over it. Mix the ingredients and knead the dough with a stand mixer fitted with a dough hook at medium-high speed for 3 minutes. Then, lower the speed to medium and continue kneading for an additional 3 minutes, until a smooth dough forms.
  • Cover the dough with plastic wrap and let it proof in the refrigerator for at least 12 hours or overnight. Remove the dough from the refrigerator 30 minutes before use. Then, divide it into 4 equal portions.
  • Preheat the oven to 320°C (608°F) or to the highest temperature your oven can reach. Place the dough on a work surface, roll each piece into a ball, and gently flatten it with your palm. Stretch and rotate it to form a large disc, about 5mm thick. Repeat with the remaining dough.
  • Generously sprinkle semolina on the dough, then transfer it to the baking sheet. Bake for 3 to 5 minutes, until it’s puffy and browned on top and around the edges.

    What kind of salt? 1 Tbsp can mean a lot of you use fine ground instead of a coarse. I don’t want to over salt.
