How To Make Apple Cinnamon Bread
First, prepare the apple filling by combining apple bites, cinnamon, and brown sugar in a saucepan. Heat the apple bites over medium-low heat, and keep stirring until the sugar melts and the cinnamon is evenly distributed. Let cool down and sit aside.
Next, make the batter. Beat light brown sugar, ground cinnamon, granulated sugar, and unsalted butter until smooth. Whisk in eggs and vanilla extract. Sift all-purpose flour and baking powder into the mixture. Slowly pour in milk while mixing.
Assemble the batter and apple filling in two small loaf pans. Bake for 35 minutes.
Cool down the bread in the pan for 10 minutes. Unmold, slice, and serve it warm.
Baking Tips
- Always check the doneness of the cake before removing it from the oven. Insert a toothpick into the center of the cake, and if it comes out clean, it is done.
- Bake the cake for 35 minutes if using small loaf pans. It may take 15 to 20 minutes more when baked in a regular loaf pan.
- If the top of the cake gets too dark, tent it with a sheet of aluminum foil to avoid over-browning at the 30 minutes mark.
Frequently Asked Questions
Once apple cinnamon bread has cooled completely, slice and store them in airtight bags (Ziploc bags). The bread lasts one week in the refrigerator.
You may also freeze the bread for up to 3 months with plastic wrap covered for each slice and sealed in an airtight bag.
Warm the frozen slices in the microwave for 15 to 30 seconds before serving.
Pick fresh, firm, crispy apples for baking to avoid apples from getting too soft after baking. Granny Smith and pink lady are good choices for tart and sweet apples. I prefer Fuji, Gala and Honeycrisp for this recipe which adds more flavor to the bread from their natural sweetness.

Have you ever subbed with Almond flour, & Almond milk? Or a different flour, & milk to help cut sugar & carbs??
I have not. You could certainly try, but please bear in mind that the ratio of almond milk and almond flour will be different.
Great quick bread. I used a honey crisp apple. Didnโt have whole milk substituted half and half. It took 70 minutes @ 350 to test done. Delicious. Definitely a keeper.
Note: Next time I will top with some type of course sugar.
can almond milk be substituted for whole milk
Yes, this is a great substitution and is measured equally.
Very good but the only issue I had was the batter overflowed using the same exact loaf pans as noted and it took a little to bake. Other than that, the bread was very good, and hubby enjoyed it with butter. I used a Honey Crisp apple, and the sweetness was perfect, not overly sweet like other breads. Will make again but will add a little brown sugar and maybe some pecans on top before removing from the oven. Thank you Bee!
