Ingredients  

  • 1 lbs (500g) fingerling potatoes
  • 3 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/2 tablespoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon parsley, chopped, optional

Instructions 

  • Preheat the oven to 400°F (207°C).
  • Rinse the fingerling potatoes and pat them dry with paper towels. Slice each potato in half horizontally.
  • Heat an oven-safe skillet (preferably cast iron) over medium heat. Add the melted butter and sauté the garlic. Add the potatoes and stir a few times before incorporating the garlic powder and salt. Mix well to combine.
  • Transfer the skillet to the oven and roast for 20 minutes, or until the potatoes are golden brown, tender, and cooked through. If desired, top with chopped parsley. Serve immediately.
