- 10 oz (280g) ground chicken
- 1/2 cup whole roasted cashew nuts
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce

Sauce:
- 3 tablespoons Thai sweet chili sauce

Instructions
- Mix all the ingredients for the sauce in a small bowl and stir to combine well. Clean the butter lettuce by peeling each leaf off the stem and set aside.

Add the ground chicken, stirring continuously with a spatula to break up any lumps. Then, add the cashew nuts, fish sauce, and sweet soy sauce, and stir to combine well.
- Continue to cook until the filling is dry but still moist. Add the cilantro and turn off the heat.
- To assemble the lettuce wraps, place 1 tablespoon of the filling in the center of a butter lettuce leaf and top with some sauce. Wrap it up and enjoy immediately.

Excellent dish. Instead of fish sauce > I substituted sriracha.
