I can’t get enough of grilled shrimp skewers in summer. I am not sure about you but summer just screams seafood to me: honey sriracha shrimp kebab, peel and eat shrimp, summer seafood stew, grilled shrimp with kimchi miso butter, etc.
I have a very popular recipe Chili Lime Chicken that everyone seems to love. That recipe is extremely delicious and many readers have tried with success.
A few weeks ago, a reader left a message and told me that she turned my Chili Lime Chicken into Chili Lime Shrimp and everyone was begging for more. What a great idea! Hence I am sharing with you this amazing recipe today!
I made some slight modification to the recipe. I added sweet chili sauce to the marinade. The shrimp is mouthwatering, moist, juicy, succulent and bursting with the wonderful flavors of sweet chili, lime juice and garlic. Make a bunch of these shrimp skewers before the end of summer!!

Chili Lime Shrimp Recipe
Ingredients
- 1 lb. (500g) shrimp, peeled and deveined, tail-on
Marinade:
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1 tablespoon fresh cilantro leaves, or parsley leaves, chopped finely
- 2 tablespoon Thai sweet chili sauce
- 2 cloves garlic, chopped finely
- 1/2 tablespoon honey
- 1 pinch salt
Instructions
- Soak the bamboo skewers in cold water. Rinse the shrimp and pat them dry with paper towels. Set aside.
- In a bowl, whisk together all the ingredients for the marinade. Add the shrimp and toss to coat evenly. Marinate for 30 minutes.
- Fire up the grill and cook the shrimp until they're fully cooked and slightly charred on the surface. Serve immediately.

My Husband just happened upon this recipe, we had 2lbs of shrimp and didn’t know what to do with it. We’re so lucky to have found this recipe, it is now our go to shrimp marinade! It is so delicious!! It was a huge hit when we made it. We used a pellet grill to BBQ it and basted it with the marinade. ?
We doubled the recipe and we use Gochujang sauce for the chili sauce.

You don’t really need any dip! I would just eat them as is. :)
I make a lime aioli. Its just the zest of one lime, 1/2cup of mayo, and 1/2tsp-1tsp pepper. I usually just use the pepper mill until it looks about right but it probably is around that amount of pepper. And that is it! Super simple and everyones fave. It works great for sweet potato fries and on any shrimp or fish tacos. I make it first and let it sit in the fridge and meld the flavours, while i make the rest of the supper.

A winner! I was grilling 2 lbs of shrimp but only had 2 limes (close to 1/4 cup). I used fresh squeezed orange juice instead. Yummy!
