The good thing about this recipe is that I don’t even have to cook. It’s so easy to make since I just have to marinate the cucumber and make the salad dressing. Combine both of them together and it is ready to serve!

Thai Cucumber Salad
Ingredients
- 1 lb. cucumber, cut into pieces
- 1/4 teaspoon salt
- 1/4 small red onion (sliced)
- 2 tablespoons chopped roasted peanuts
- 1 tablespoon chopped cilantro
Dressing:
- 2 tablespoons sugar
- 2 tablespoons water
- 4 tablespoons Thai sweet chili sauce
- 1 tablespoon apple cider vinegar
Instructions
- Add salt to the cucumber, mix well and set aside in the fridge for 10-15 minutes. In the meantime, make the dressing, by combining all the ingredients in a small sauce pan.
- Turn on the heat and reduce the dressing a bit, so it's slightly thickened. Let cool.
- Drain the salt water from the cucumber completely. Toss the cucumber, onion, and mix with the Dressing. Top with the peanut and cilantro, serve immediately.

I have made this salad twice now. Both times I served it as a side with a Thai entree. First time we ate it with Spicy Thai Basil Chicken from Chef John that I found on Allrecipes. Tonight we will have it along with Bang Bang Shrimp from Damn Delicious. This salad is amazing and a delicious entree and puts it over the top as a complete meal. Great simple salad that is FULL of flavor. I completely deseeded my cucumber and sliced it into “moons”. I love how the cucumber stays crisp because you salt it first. The dressing is not too sweet, and balances well with the red onion.

Yummy, made it but left the cilantro out as I loathed taste and smell. I also cut the seeds out of the middle of the cucumber as it gives my mother heartburn. But it tasted the same and now a welcome and well loved recipe, many thanks

Best cucumber salad I’ve ever had! Prepared it exactly according to recipe— thought it would be too sweet but it wasn’t. Making it again ( for the third time this week! ) and not changing a thing. Salting the cucumber first, as the recipe says, is an important step. Drain the salt water ( don’t rinse it off ). Excellent recipe! Thanks!
