Ingredients  

  • 1/4 teaspoon salt , or to taste
  • 1/2 teaspoon sugar
  • 3 dashes ground black pepper
  • 1 tablespoon Ranch dressing
  • 1/4 cup heavy whipping cream
  • 2 medium-sized potatoes, peeled and cut into pieces
  • 8 oz. (230g) boneless, skinless chicken breast, cut into cubes
  • 2 slices Canadian bacon, or bacon strips, cut into pieces
  • 4 tablespoons unsalted butter, cut into small pieces
  • 1 cup shredded cheddar cheese
  • 1 stalk scallion, green part only, cut into small rounds

Instructions 

  • Heat the oven to 350°F (176°C). Lightly grease a 9" x 9" (23 x 23 cm) baking pan with oil or butter.
  • Add the salt, sugar, pepper, and Ranch dressing to the heavy whipping cream, then lightly stir to combine.
  • Spread the potatoes in a single layer, followed by the chicken.
  • Sprinkle the bacon and butter on top, then add half of the cheddar cheese and the scallions.
  • Pour the heavy cream over the top of the casserole, cover it with aluminum foil, and bake for 1 hour.
  • Uncover the pan and bake for an additional 30 minutes. In the last 10 minutes, sprinkle the remaining cheddar cheese on top and bake until the cheese is slightly crusty.
  • Remove from the oven and serve immediately.

    Made this today for me and my daughter and we loved it. It took a bit longer to cook as I used a slightly smaller baking dish and struggled to make one layer of chicken and potatoes, this is very tasty and will definaltly be making again. ( Thankyou for the tip with the bacon, I crisped it up first and it gave great texture to the finished dish)

      I made this last week. Fantastic recipe. I used the bacon that was suggested instead of the Canadian bacon. I doubled the recipe and it came out wonderful. Husband loved it. Thank you for this, definitely a keeper. I cooked it 1 hour and 50 minutes since the recipe was doubled. Awesome.

      You CAN adjust the recipe! I use half and half or even 1%milk! Sometimes we don’t even use bacon( If we do
      we use turkey bacon) I use Pam spray and 2-4 pats of margarine for a much larger casserole! 8 tenderloins and 6-8 potatoes! Turns out great! The half and half works great!

      Oh wow- unbelievable to assume what people must think about you because of your weight! That definitely sounds like some kind of mental disorder. Having said that people who are under- weight get judged too- as a matter of fact most everyone at some point has been wrongly judged. So stop worrying about what you think people think. Enjoy your life and have some food that you would enjoy at least every once in a while. There’s many reasons why some people struggle with their weight including thyroid disorders, other hormonal problems like PCOS and then some people just simply do not know how to balance complex carbs, simple carbs and proteins. Others yet just over eat and don’t burn enough calories causing their body to store the extra energy as fat. You may want to be checked out for any medical reasons for extra weight. You could see a dietician to learn how to balance meals properly. Lastly walk for great exercise and if possible lift weights, even light weights work fantastic. The extra muscle you gain causes your metabolism to speed up and burn more fat. But my goodness for your sake and others that you are projecting your thoughts and ideas on, please stop making mean, unnecessary and unfair comments on someone’s blog. You actually have no idea what any one here including the author may be dealing with in their life, do you? We all go through trials and tribulations- no one is exempt from problems.
