In a blink of an eye, summer is merely a few weeks left.
For those who have kids, back-to-school will come sooner than you think, and life will be back to same old same old again soon.
Just before all the summer fun ends, I wanted to share this amazing Coconut Mojito recipe with you. Mojito is one of my favorite cocktails of all time.
I love mint leaves and the combination of white rum, sugar, lime and ice.
Now, how do you kick it up a notch?
Make your regular mojito into coconut mojito using coconut water and you are sure to have the most amazing and refreshing summer cocktail ever!
If you remember, I turned my regular lemonade into coconut water lemonade and it has been my go-to thirst quencher.
The coconut water makes the mojito so much better, healthier, lighter, and naturally sweeter.
It also adds a tropical nuance to the libation.

Coconut Mojito
Ingredients
- 1 bunch mint leaves
- 2 cups bottled coconut water
- 5 tablespoons freshly squeezed lime juice
- 100 ml white rum
- 3 tablespoons sugar
- 2 cups ice
Instructions
- Place the mint leaves in a jar and muddle it by pounding and twisting on the mint leaves lightly. Add the coconut water, lime juice, white rum and sugar.
- Stir to combine well, or until the sugar dissolves. Add the ice and serve the coconut mojito immediately.
