- 1 teaspoon baking powder
- 4.5 oz. salted butter, room temperature
- 1 teaspoon vanilla extract
- 3 oz. fine sugar
- 2 large eggs
- 2 tablespoons milk
- 2 oz. walnut, processed in a food processor until fine

Instructions
- Preheat oven to 350°F (180°C).
- Grease two (2) mini loaf pans with butter. Sift the flour and baking powder, set aside.
- Cream butter, vanilla extract and sugar till fluffy and pale (take about 4 mins using electric hand mixer at speed 2). Add in the eggs one at a time, cream well until well combined before adding another one.
- Fold the flour, ground walnut and milk, and mix to combine well. Transfer the batter into the greased pan, shake gently to level off the batter. Sprinkle the whole walnuts on top.
- Bake for 30-35 mins or until a cake tester inserted into the walnut butter cake comes out clean. Remove from the oven, let cool on a wire rack. Loosen the cake from the loaf pans and slice into pieces.

Good recipe, but I noticed in the comments that she did not actually tell anyone what size pan to use. I used a 6 cup capacity one (Nordic Ware) and it came out a bit low and flat looking. So you’d probably want to use a smaller loaf pan than that. 30-minutes was perfect for that size pan though.
Also, it has a light, not too sweet flavour that reminds me of a Japanese dessert.
What a fabulous recipe. I followed it to the letter and it turned out perfectly. Delicious, moist and very, very moreish!

Hi Bee,
I tried yr butter cake recipe. Why is the cake very oily? Did I whisk the butter incorrectly? Or us it the brand of the butter that matters? I used SCS butter for yr walnut cake recipe n was fine. This time I used President brand cos it’s on offer.
Thanks in advance!
The butter ccake is not oily as you can see from my picture. It’s so good, much better than walnut butter cake. Yeah, different brand of butter has different oil/water content. Not all butter yields the same results.
Thx Bee for yr reply! I tot I didn’t whisk correctly. The other thing is I’m amazed how you do it to be so flat. Mine got a dome.
I don’t know I live in the USA, different ingredients and different environment.
Hi,
I would like to ask for this ‘WALNUT BUTTER CAKE’ what size of pan should i use? And also,if i want to add banana in,should i reduce the other ingredients.example:sugar?
I wouldn’t add bananas. You can use regular loaf pan or mini loaf pan.
Can I just say this is seriously bomb
I made it today and it was SO GOOD
Only thing slightly crumbly
Thanks Priscilla, yes, this Walnut Butter Cake is soooo good! Please try my butter cake and marble cake recipes, even better!
This is a very good recipe. Not too sweet, lovely rich buttery and mellow warm flavour of walnuts. Highly recommend. Thank you for sharing Bee.

Add more sugar. I don’t like my cake too sweet.
Hi Bee!
I would like to try yr recipe but I would like to clarify :
1) What size pan should I use for this recipe?
2) Do I have to use 60gm or 65gm size eggs for the large eggs used in this recipe?
Thx!
You can use loaf pan. Both eggs should be fine.
This recipe is so good that I made the cake thrice till now following just THIS RECIPE. It’s a must try. ❤
Thanks this recipe is awesome!
