Ingredients  

  • 1/4 teaspoon salt , or to taste
  • 1/2 teaspoon sugar
  • 3 dashes ground black pepper
  • 1 tablespoon Ranch dressing
  • 1/4 cup heavy whipping cream
  • 2 medium-sized potatoes, peeled and cut into pieces
  • 8 oz. (230g) boneless, skinless chicken breast, cut into cubes
  • 2 slices Canadian bacon, or bacon strips, cut into pieces
  • 4 tablespoons unsalted butter, cut into small pieces
  • 1 cup shredded cheddar cheese
  • 1 stalk scallion, green part only, cut into small rounds

Instructions 

  • Heat the oven to 350°F (176°C). Lightly grease a 9" x 9" (23 x 23 cm) baking pan with oil or butter.
  • Add the salt, sugar, pepper, and Ranch dressing to the heavy whipping cream, then lightly stir to combine.
  • Spread the potatoes in a single layer, followed by the chicken.
  • Sprinkle the bacon and butter on top, then add half of the cheddar cheese and the scallions.
  • Pour the heavy cream over the top of the casserole, cover it with aluminum foil, and bake for 1 hour.
  • Uncover the pan and bake for an additional 30 minutes. In the last 10 minutes, sprinkle the remaining cheddar cheese on top and bake until the cheese is slightly crusty.
  • Remove from the oven and serve immediately.

      You can use smoked duck/turkey, or beef/turkey bacon, proscuitto or pancetta. In a pinch, even ham will work.

        I cannot use bacon because it’s not kosher, as is ham etc. All parts of the pig which is forbidden for me.

    Doubled the recipe. Used center cut bacon, keeping everything else the same (used 9×13 bakeware). Should have either pre-cook the bacon or cut back on the butter. There was just a pool of melted butter/bacon grease afterwards. Flavor was great, just had to make sure to leave as much grease behind!

      Flavor was fine. Poured off about a cup of grease. My wife had 2nds and 3rds. Easy to make, I precooked the bacon and chicken to cut down on the grease but still had an over abundance. Still it was very tasty
