I love tomatoes, especially heirloom cherry tomatoes in the shades or red, orange and yellow.

They taste so good and their appearance is such an eye candy that I can’t help but buying them whenever they are available in my farmers market.

One of the easiest and healthiest recipes to make is marinated tomatoes that you can serve all year long, but especially delightful in summer. They can be made ahead and make a perfect side dish for just about anything.

If you can get heirloom cherry tomatoes at your farmers market or neighborhood stores, buy them. Otherwise, regular cherry tomatoes will be just fine. My marinated tomatoes recipes only 10 minutes to make, it’s really one of the easiest and healthiest recipes you can make at home.

Marinated Tomatoes

Ingredients  

  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 1/2 tablespoons balsamic vinegar
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • Pinch cayenne pepper
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped parsley
  • 8 oz (230g) cherry tomatoes, cut into halves

Instructions 

  • Combine the olive oil, garlic, balsami vinegar, sugar, salt, cayenne pepper, thyme and parsley together. Whisk to mix well. Toss the tomatoes with the dressing, gently stir around to coat the tomatoes well with the dressing. Serve immediately.

    I have been using this recipe repeatedly since I started harvesting my cherry tomatoes. My husband and I love itโ€ฆ we eat it as a side or make sandwiches with them. I gave some to neighbor and she loves it so much she asked for the recipe too. Tks for sharing this with us. I used to have problem using up my tomatoes last time before I came across your recipeโ€ฆ but now they donโ€™t seem to come in fast enough!

    The tomatoes I used weren’t great (grape) so I added a little extra balsamic- didn’t serve them with dinner but kept them marinating on the counter overnight. I tried them for a snack today and they were so good, I ate the whole batch. This is a great recipe.

    I usually donโ€™t leave comments or reviews on stuff, but….these tomatoes? OMG. Soooooo delicious. I made them to top a veggie Mediterranean bowl I threw together (basamati rice with a little cilantro, roasted seasoned veggies – purple sweet potatoes, acorn squash, butternut squash – hummus, shredded carrot and raisin salad, tzatziki), and much like the rug in The Big Lebowski did for his room, these tomatoes tied the bowl together. Sweet, savory, tart, refreshing….all words to describe this dish. Just absolute perfection, so many flavors working together in harmony to create a refreshing, delicious zing of flavor explosion in each bite. They were the perfect compliment to my veggie and rice bowl, and, Iโ€™m not ashamed to admit, the next day I polished off the remainder of the tomatoes on their own, and they were even better after soaking in all that flavor overnight. This was so fast and easy to throw together, and I had all of the ingredients on hand (lucky me!), so no special trip to the store. Even my girlfriend, who is typically very anti-tomato, was crazy for these little suckers and gobbled them right up.

    Iโ€™m so glad I stumbled upon this recipe (and this site – canโ€™t wait to try more tasty recipes), and Iโ€™ve made these tomatoes 3 more times in the past 2 weeks.     This was yummy! I did tweek it a bit because I donโ€™t like thyme so I used some garlic, smoked paprika, and lime juice. Still, go eat thing to do with all of those baby tomatoes that seem to all ripped at the same time! Thanks !!

    This recipe is delicious. I’ve made it five or six times since discovering it. My favorite way to eat it is on top of toasted french bread as bruschetta. I’ve tried it with basil instead of parsley when I ran out and that was delicious as well.
