Shrimp Garlic Noodles are very popular now in many Asian restaurants here in Southern California. Everywhere I go, there is a garlic noodle dish on the menu.
I first published my Crustacean garlic noodles recipe back in 2008, which was 10 years ago. Sometimes I really think that these Asian restaurants copied my recipe, as it has happened many times in the past!
Anyway, garlic noodles recipe is one of the most popular recipes on my site. Over the years, I have simplified the recipe to a few versions.
This Shrimp Garlic Noodles recipe is very easy but crazy delicious. You really have to try it.
Which Noodles To Use
There are many kinds of fresh noodles in Asian stores or supermarkets; it can be overwhelming if you are not familiar. For the best results, you want to use fresh Taiwanese-style yellow noodles. Below is the picture of the noodles.
The noodles are coated in oil and yellowish in color. The noodles are packaged in a clear plastic bag. They are the best for garlic noodles.
Fresh Noodles Vs. Dry Noodles
If you have an Asian store, definitely buy fresh noodles. If Asian stores are not accessible, you can always use spaghetti for this recipe.
To be honest, I often use spaghetti when I make garlic noodles. It’s easy and convenient.
Shrimp Garlic Noodles Ingredients
- Fresh Taiwanese-style yellow oil noodles
- Unsalted butter
- Garlic
- Oyster sauce – This is oyster sauce or oyster-flavored sauce, the pillar of many Asian recipes. You need to have a bottle of this if you want to make delicious Asian food. I recommend Lee Kum Kee brand.
- Sugar
- Grated parmesan cheese
- Shrimp – The shrimp is the star of this recipe. Buy jumbo-sized or medium-sized shell on shrimp.
- Olive oil
- Soy sauce
- Scallion
- Salt

How To Make Shrimp Garlic Noodles
Step 1. Loosen the fresh noodles with your hands, ensuring that every strand is separated. Transfer the noodles to a colander and place it in the kitchen sink. Boil a pot of water. Pour the hot water over the noodles to rinse off the oil and slightly cook them. Drain the noodles and set aside. Keep the shell on the shrimp and cut a slit along the back to remove the vein. Rinse the shrimp with water and pat very dry with paper towels. Set aside.
Step 2. Heat a skillet or wok over medium heat and add the butter. Sauté the garlic until it starts to brown. Add the oyster sauce and sugar, stirring to combine well before adding the noodles to the skillet or wok. Stir continuously with a spatula or a pair of Chinese cooking chopsticks to mix the noodles with the sauce. Turn off the heat.
Step 3. Add the Parmesan cheese to the garlic noodles and stir to combine well. Transfer the noodles to a serving platter.
Step 4. In the same wok or skillet over medium heat, add the olive oil and garlic. Quickly sauté, then add the shrimp, soy sauce, and sugar. Stir the shrimp until they are cooked through. Add a pinch of salt and the scallions, then dish out.
Step 5. Divide the garlic noodles among four serving bowls. Top each bowl with 4-5 shrimp and serve immediately.

Hi! I’m a bit confused—is this recipe using the Oyster Sauce you showed or Lite Soy sauce? I know I’m going to love this dish!
Hi Ellen. There are two parts to the recipe: the noodles and the shrimp. Oyster sauce for the noodles, and soy sauce for the shrimp. Please follow the ingredients list in the recipe as that will generate the best results. Happy cooking!

Just made this for my family and they looove it!!! Yes, we Asians eat shrimp with the shell onโmy dad always told me itโs a good source of calcium. Iโm teaching my daughters to eat it this way too. Theyโre getting used to this way of eating. Too many people these days are eating seafood deboned and shelled such as fish and theyโre missing out on the tastiness of leaving them in. Just want to confirm the amount of soy sauce – is it one-half tablespoon or one-and-one-half tablespoons? The space between the “1” and the “2” in the recipe above is misleading (“1 /2 tablespoon soy sauce”) …

I am having difficulty finding the noodles, fresh or frozen or on line. Would you be kind enough to share a photo or the bagged noodles that you call yellow oil noodles from Taiwan? I have visited large Asian grocers in the Tampa Bay Fl. area and they do not understand what I am looking for. Thank you.

I love noodles and get cravings for them a lot.. and Oyster Sauce – love it – just wondering about the Parmesan Cheese – I don’t generally buy the powder stuff – I buy the real petals in a large container from Costco – can this be used in the recipe?
