Chicken Casserole
Ingredients
- 1/4 teaspoon salt or to taste
- 1/2 teaspoon sugar
- 3 dashes ground black pepper
- 1 tablespoon Ranch dressing
- 1/4 cup heavy whipping cream
- 2 medium-sized potatoes (peeled and cut into pieces)
- 8 oz. boneless, skinless chicken breast, cut into cubes
- 2 slices Canadian bacon or bacon strips (cut into pieces)
- 4 tablespoons unsalted butter (cut into small pieces)
- 1 cup shredded cheddar cheese
- 1 stalk scallion (green part only, cut into small rounds)
Instructions
- Heat oven to 350 °F (176 °C). Lightly grease a 9" x 9" baking pan with some oil or butter.
- Add the salt, sugar, pepper and Ranch dressing to the heavy whipping cream. Lightly stir to combine well.
- Spread the potatoes, follow by the chicken, in one single layer.
- Sprinkle the bacon, butter, and then top with half of the cheddar cheese and the scallions.
- Pour the heavy cream over top of casserole. Cover with aluminum foil and bake for 1 hour.
- Uncover the pan and bake for another 30 minutes. In the last 10 minutes, sprinkle with the remaining cheddar cheese and bake until the cheese is slightly crusty.
- Remove from the oven and serve immediately.

Can we substitute the potato with sweet potato?
You can but I don’t think it will taste very good with sweet potatoes.

I used half & half instead of cream, regular bacon, and dried chives in place of scallions. Delicious! Only thing I would say is that it was kind of swimming in the butter at the end. I might personally dial it back a little to see if I can get away with less. Still highly recommend. Boyfriend approved.

I made this tonight. Doubled recipe and used 13 glass baking dish. Used undiluted evaporated milk instead of cream. Substituted chopped red pepper for scallion. Apart from that, followed recipe, and it was AWESOME.

My family LOVES this dish!! My college students ask for it every time they come home for a break. My daughter has even made it for her boyfriend and his roommates and they love it as well. One of the roommates ate a whole pan himself! We cook the bacon a bit before putting it in the dish – gives it nice crunch.

You can use plain Greek yogurt.

The recipe calls for bacon. Your video, looks like it is back bacon, I assuming , you don’t need to cook the bacon? I want to try out the recipe tomorrow.
You can use American bacon or Canadian bacon. In the video, it’s Canadian bacon. Bacon will be cooked in the oven.
