Chicken Casserole
Ingredients
- 1/4 teaspoon salt or to taste
- 1/2 teaspoon sugar
- 3 dashes ground black pepper
- 1 tablespoon Ranch dressing
- 1/4 cup heavy whipping cream
- 2 medium-sized potatoes (peeled and cut into pieces)
- 8 oz. boneless, skinless chicken breast, cut into cubes
- 2 slices Canadian bacon or bacon strips (cut into pieces)
- 4 tablespoons unsalted butter (cut into small pieces)
- 1 cup shredded cheddar cheese
- 1 stalk scallion (green part only, cut into small rounds)
Instructions
- Heat oven to 350 °F (176 °C). Lightly grease a 9" x 9" baking pan with some oil or butter.
- Add the salt, sugar, pepper and Ranch dressing to the heavy whipping cream. Lightly stir to combine well.
- Spread the potatoes, follow by the chicken, in one single layer.
- Sprinkle the bacon, butter, and then top with half of the cheddar cheese and the scallions.
- Pour the heavy cream over top of casserole. Cover with aluminum foil and bake for 1 hour.
- Uncover the pan and bake for another 30 minutes. In the last 10 minutes, sprinkle with the remaining cheddar cheese and bake until the cheese is slightly crusty.
- Remove from the oven and serve immediately.

I doubled the recipe and substituted chicken tenders for breasts filling the dish. I double stacked the potatoes with the tenders between. Also substituted sour cream for ranch dressing. The excess liquid combined with the sauce as the dish cooled. GREAT RECIPE!! Gobbled by 4. Served with steamed asparagus and caramel apple Pie over a cheddar cheese round for dessert.

Hi Chez, the temperature should be the same and cooking time should be the same, too. If not, bake a bit longer.
If you double the recipe, how long would you bake it?
You can bake for extra 5-10 minutes. I am not entirely sure without trying myself.

I made this recipe tonight. I had to triple it for my family. It tastes AMAZING, but it was full of liquid. Like I had to use a slotted spoon to serve from so much juice in the bottom. What could I have possibly done wrong? I added no water at all. I simply tripled the recipe as it states.
Hi Michelle, I believe the water comes from the chicken. Did you pat dry the chicken. Or were the potatoes wet? Pat dry with water and you should be good.

I don’t recommend, it won’t taste good with cooked chicken.
