Ingredients
- 1/4 teaspoon salt , or to taste
- 1/2 teaspoon sugar
- 3 dashes ground black pepper
- 1 tablespoon Ranch dressing
- 1/4 cup heavy whipping cream
- 2 medium-sized potatoes, peeled and cut into pieces
- 8 oz. (230g) boneless, skinless chicken breast, cut into cubes
- 2 slices Canadian bacon, or bacon strips, cut into pieces
- 4 tablespoons unsalted butter, cut into small pieces
- 1 cup shredded cheddar cheese
- 1 stalk scallion, green part only, cut into small rounds
Instructions
- Heat the oven to 350°F (176°C). Lightly grease a 9" x 9" (23 x 23 cm) baking pan with oil or butter.
- Add the salt, sugar, pepper, and Ranch dressing to the heavy whipping cream, then lightly stir to combine.
- Spread the potatoes in a single layer, followed by the chicken.
- Sprinkle the bacon and butter on top, then add half of the cheddar cheese and the scallions.
- Pour the heavy cream over the top of the casserole, cover it with aluminum foil, and bake for 1 hour.
- Uncover the pan and bake for an additional 30 minutes. In the last 10 minutes, sprinkle the remaining cheddar cheese on top and bake until the cheese is slightly crusty.
- Remove from the oven and serve immediately.

Great. Had some vegs to use up so I added some mushrooms, half cup of frozen peas, half an onion diced and half a small zucchini diced. Used left over roast chicken and par baked potatoes. Didnt have to bake as long and it worked out great and stretched the meal and served with green salad and crusty bread. Thank you

I have a question on the recipe in the instructions it says to pour heavy cream over top how much cream do you pour
The amount of heavy cream is in the recipe: 1/4 cup heavy whipping cream
Under “Nutritional Facts” you list the serving as 2g which is 0.0705479 oz. That can’t be correct can it? I want to try this recipe, but not if I can only get a bite for 456 kcal
I didn’t have chicken breasts so I used hamburger and added some Italian seasoning to it. It turned out awesome and the kids loved it. I’ll have to double the recipe next time.
