Garlic roasted tomatoes recipe is one of my favorites whenever I have loads of tomatoes in the fridge.
This past week, I got boxes of Campari tomatoes and decided to make this.
I love roasted tomatoes, they are so easy to make and they go well with almost anything I make, and they are so healthy!

Can you believe that the active time of this oven roasted tomatoes recipe is 10 minutes?
Yes, you just need to slice up the tomatoes in halves, mince some garlic, arrange the tomatoes in a baking tray, and that’s pretty much it.
The rest is done in the oven, so you have more time doing the things you like instead of working in the kitchen.

Garlic Roasted Tomatoes
Ingredients
- 1 1/2 lbs. campari tomatoes, cut into halves
- 3 cloves garlic (minced)
- 3 cloves whole garlic
- 1 tablespoon olive oil
- salt
- ground black pepper
- chopped parsley
Instructions
- Preheat oven to 375°F (190°C).
- Arrange the tomatoes and whole garlic on a baking tray. Drizzle the olive oil on the tomatoes, follow by the garlic, salt and ground black pepper. Sprinkle the tomatoes with the chopped parsley.
- Roast in the oven for 20 minutes. Serve warm.

How do you incorporate the whole garlic cloves? I think I would just use six chopped cloves?

Oh my goodness! This was absolutely delicious on toasted bread with roasted asparagus, Swiss cheese and poached eggs for brunch. I roasted whole cloves of garlic as well and drizzled with lemon juice at the end. Scrumptious!

You can use roma tomatoes, I like smaller and round ones.
