We have just returned from an amazing vacation in central Vietnam. I can’t wait to share my complete experience here with you but one of the things that we thoroughly enjoyed was the food served at our hotel.

Every morning, we were treated to an amazing buffet breakfast with numerous dishes. One of the dishes that I absolutely enjoyed was the Parmesan roasted tomatoes.

Juicy, ripe and plump roasted tomatoes topped with generous Parmesan cheese. They were so good that I had to make them upon my return.

These roasted tomatoes are so easy to make, takes only 2 key ingredients: tomatoes and Parmesan cheese. The rest are pantry items that everyone has at home (olive oil, salt and black pepper).

This is the perfect season to try this recipe as gorgeous tomatoes are abundant in the market or farmers market now.

How To Make The Best Roasted Tomatoes

Easy and quick healthy Parmesan Roasted Tomatoes in a plate ready to serve.

Choose smaller tomatoes, slice them into halves, lightly coat the tomatoes with some olive oil and sprinkle a wee bit of salt and pepper.

Top with Parmesan cheese and roast them in the oven. Tomatoes are naturally loaded with umami flavors and the addition of Parmesan cheese basically elevate the fresh taste.

I especially love the bottom part of the tomatoes where the skins are slightly burned and browned.

You can serve the tomatoes with any summer dishes you make. They make everything so much more healthier and delicious.

Take a big bite of the Parmesan roasted tomato and just savor the juicy goodness. They are utterly delightful!!

Made it last night, we loved it, this is saying a lot as I am not a tomato lover but these taste like pizza rather than tomato. Thank you for the recipe, will definitely make it again.

Are these best served immediately from the oven or are they good to make ahead and serve room temp?

Just a variation on a theme that was delicious!!! We thinly sliced a large tomato, making 10 slices. A little salt, pepper and olive oil, then, instead of parmesan cheese, we grated pecorino romano cheese. Placed in a preheated oven (400 degrees) but immediately turned the broiler on high. Broiled for about 5-8 minutes, until the cheese was starting to toast. Delicious!!!

    1. Rasa Malaysia says:

Hi Mary, I love your variation, I will have to try!! :)

These sound really yummy. Is there a certain type tomato you would recommend, or will any do? I was thinking of trying this with Romas.

It says roasted, not grilled. These were absolutely delicious! They were perfect with a cool shrimp cocktail on a hot summer night. I didn’t change a thing.
