To make the chicken wings distinctively Thai flavors, you need only a few key ingredients: garlic, fish sauce, sweet chili sauce and cilantro.
Marinate the wings for at least two hours, grill them over fire, or baked in the oven. It’s that simple.

Sweet Thai Chicken Wings
Ingredients
- 2 lbs (60g) chicken wings
- 5 cloves garlic (minced)
- 2 tablespoons cilantro stems (without leaves)
- 5 tablespoons fish sauce
- 4 tablespoons Thai sweet chili sauce
- 1 teaspoon ground black pepper
- lime wedges
Instructions
- Rub the chicken wings with the garlic and cilantro, then add the fish sauce, sweet chili sauce and ground black pepper. Marinate for two to four hours, or best overnight.
- Fire up an outdoor grill and grill the chicken wings in batches. Grill until both sides turn golden brown. Serve immediately with some lime wedges and Thai sweet chili sauce.

You can bake at 375F for 30-40 minutes or until the skin is charred.

I made these tonight and hubby loved them! I used larger drumsticks, added 1 tbsp lemongrass and 1 tbsp sesame oil. Marinated for 45min, baked in 190C oven for 30min then 10min under the grill with a squirt of honey over the top to get some colour. There was lots of marinade leftover so I tossed some carrots in it and chucked them in the oven to cook at the same time. There was quite a lot of liquid in the tray, I ended up pouring it into a pot and making a nice sticky sauce afterwards. Thanks for a great recipe!
