  • 1 lb (500g) cucumber, peeled and cut into pieces, you may scrap the seeds if you like
  • 1/4 teaspoon salt
  • 1/4 small red onion, sliced
  • 2 tablespoons roasted peanuts, chopped
  • 1 tablespoon cilantro, chopped

    I have made this salad twice now. Both times I served it as a side with a Thai entree. First time we ate it with Spicy Thai Basil Chicken from Chef John that I found on Allrecipes. Tonight we will have it along with Bang Bang Shrimp from Damn Delicious. This salad is amazing and a delicious entree and puts it over the top as a complete meal.
