Parsley potato is one of the easiest boiled potato recipes that is quick, fast and easy. It’s also a delicious recipe that goes well with many main dishes such as baked cod.
How To Boil Potatoes
To boil potatoes, you need a tall stockpot, water and salt. Fill the stockpot half way with water, add 1 tablespoon of salt and bring the water to a rolling boil.
In the meantime, rinse and scrub the potatoes so the surface is clean. Keep the skin on. Do not peel the potato skin.
Drop the potatoes into the hot boiling water, cover the lid of the stockpot to cook the potatoes.
How Long To Boil Potatoes
It takes 15 minutes to boil baby potatoes or smaller new potaotes. If you cut regular-sized or big potatoes into quarters, it will take about 20 to 25 minutes.
For whole potatoes that are big, it will take at least 30-35 minutes to completely cook the potatoes in the center.
Use a fork and poke it to the center to check doneness.

Boiled Potatoes with Parsley
Ingredients
- water, for boiling
- 1 tablespoon salt, for boiling
- 1 lb (500g) baby potatoes, red and yellow
- 3 tablespoons unsalted butter, melted
- 1/2 teaspoon salt
- 3 dashes ground black pepper
- 2 tablespoons chopped Italian parsley
Instructions
- Fill a stockpot halfway with water and salt. Bring it to a rolling boil. In the meantime, clean, scrub, and rinse the baby potatoes.
- Boil the baby potatoes for 15 minutes. Drain and rinse them under cold water. Slice the potatoes into wedges and combine them with the melted butter, salt, pepper, and parsley.
- Stir gently to mix well. Serve the boiled potatoes immediately.

This is a great, versatile side dish, one I often had through my childhood. I will use them with stews and slow cooked roasts, as they are mild in taste and excellent flavour carriers.
this is the perfect side dish to a Viennese schnitzel dinner. tossed salad and voila’! or just with mixed veggies and chicken makes a good kids meal. i grew up on such foods in Austria

I grew up on a midwest farm, and boiled potatoes were on our table–and those of most neighbors–pretty much daily (we rarely ate rice or pasta because we didn’t grow them). Although baby potatoes are particularly delicious, any will work. Make more than you need and use the remainder for a variety of other things–cottage fries, potato salad, creamed potatoes, quick potato soup are just a few of the endless uses for leftover boiled potatoes.

Haha! Delighted to see this recipe here, Bee! My Slovak father used to make these for us nearly 70 years ago! He used dried parsley, because fresh was not as readily available as today. I still make them a lot these days. They go well with any kind of meat or fish. And, as I said, if you don’t have fresh parsley on hand, try it with dried and just allow them to sit for a few minutes for the parsley to reconstitute. I hope everyone will try them!
