I am so excited that it’s January as we will be celebrating Lunar (Chinese) New Year on January 28. This year marks the year of the Fire Rooster and I can’t wait to celebrate it with my family: reunion dinner, red packets, firecrackers and lion dance. To me, this is the happiest time of the year!
Chinese New Year is all about sharing food as we get together for 15 days of non-stop eating and feasting. When it comes to preparing authentic Chinese dishes, you can’t miss the savory stir-fry sauce, a building block in Chinese cuisines and Asian stir-fries.
I am thrilled to be working with Argo® Corn Starch as I am going to show you how you can use it to make this easy all-purpose stir fry sauce, as well as using the corn starch to “velvet” the protein in stir-fries, for example: chicken, pork, beef, fish or shrimp. Making the “brown sauce” is easier than you think. It calls for only a few ingredients: oyster sauce, soy sauce, sugar, water, and corn starch. The corn starch thickens the sauce, so the stir fry sauce clings to the meat, and every bite is bursting with deep flavors. Corn starch is also used to tenderize meat in Chinese cooking. This technique is called “velveting.” I am sure you have tasted the tender, silky smooth and velvety chicken or beef at Chinese restaurant; the secret ingredient is corn starch and my choice is always the yellow box Argo® Corn Starch.
To showcase my stir fry sauce, I made this healthy, delicious and absolutely colorful Chicken with Broccoli and Carrots.
