Ingredients  

  • 1 cucumber, cut into bite-size pieces
  • 1 red bell pepper , cut into small pieces
  • 1 yellow bell pepper , cut into small pieces
  • 1 cup cherry tomatoes , cut into half
  • 1/2 red onion, thinly sliced
  • 1/2 cup cubed feta cheese

Vinaigrette

  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

    Delicious and authentic. During my several times in Greece, I was never served a “Greek” salad that contained lettuce. A dressing variation I was sometimes served a version that used a tiny bit of sugar and apple cider vinegar instead of the more traditional wine vinegar. And bring on the Kalamata olives for a delicious bite of flavor!

    I make a similar salad, however, I do not add a Dijon mustard. I would recommend adding a tablespoon of sugar, otherwise, it has a very acidic taste.
