How To Make Lumpia In An Air Fryer
Add the ground pork, cabbage, scallions, soy sauce, fish sauce, and a bit of black pepper to a bowl. It’s best to use your hands to mix—way easier to get everything evenly combined and the filling nicely blended
Spoon about 2 teaspoons of filling near the bottom edge of the wrapper. Roll it up tightly, keeping everything snug, and seal the edge with a bit of cornstarch mixture or egg wash so it doesn’t unravel while cooking.
Pro Tip: It’s best to use beaten egg to seal the edges, but if you’re out, a quick cornstarch mix (3 tablespoons water + 1 teaspoon cornstarch) works too.

Rolling lumpia is easier than it looks—and once you get into the rhythm, it goes fast. Here’s how I do it:
Step 1: Lay the spring roll wrapper in front of you with the edge facing you (not diagonal—just straight like a square).
Step 2: Spoon about 2 teaespoons of filling along the bottom edge of the wrapper.
Step 3: Roll it up just until the filling is covered, then brush the edge with egg wash or cornstarch mixture to help seal it.
Step 4: Keep rolling all the way to the top and press gently to seal. Done!

Ground chicken works, but make sure it has a bit of fat—like from dark meat—or the filling can turn out a little dry. I wouldn’t recommend turkey though; it’s usually too lean and ends up dry, especially in the air fryer.
