Ingredients  

  • 1 pound (500g) ground beef
  • 1 tablespoon Thai red curry paste
  • 1/2 cup bread crumbs
  • 2 tablespoons chopped cilantro
  • 1 egg, lightly beaten
  • 1 tablespoon light soy sauce
  • 1/8 teaspoon freshly ground black pepper
  • 1 baguette
  • 2 cups shredded lettuce
  • sweet chili sauce

Instructions 

  • In a bowl, combine the ground beef with the red curry paste, breadcrumbs, chopped cilantro, egg, light soy sauce, and black pepper. Mix the ingredients together with your hands until sticky.
  • Divide the mixture into 8 portions and shape them into mini burger patties.
  • Preheat the grill and cook the patties over high heat for 4-5 minutes on each side, or until cooked through.
  • Cut the baguette lengthwise into four sections. Assemble each section with two cooked mini burger patties, shredded lettuce, and a drizzle of sweet chili sauce. Serve warm.
