Once in a while, I like making healthy breakfasts, for example, banana pancakes with maple syrup, topped with my favorite berries. Nothing beats waking up and having a feel-good breakfast that is loaded with all the nutrition one needs for the rest of the day–protein, vitamins, minerals, carbohydrates, and more.
I am not a big fan of traditional pancakes; I think they are too dry and bland for my taste, plus they get soggy when it soaks up the syrup. I like pancakes my mother’s way, which is similar to French crepes…(get banana pancakes recipe after the jump)
Filled with slightly browned bananas, banana pancakes are absolutely delicious, especially with maple syrup. I also love topping my banana pancakes with fresh berries–blackberry, blueberry, strawberry, or raspberry. Berries give the banana pancakes a refreshing flavor, not to mention adding beautiful color to the serving.

Try making these banana pancakes when you have all the sweet time in the morning. You will find it rewarding.
Make 6 banana pancakes
Ingredients:
1 1/2 cup all-purpose flour
1/4 cup sugar
1 cup milk (or water)
2 eggs
Butter for greasing
Berries of your choice (for topping)
Maple syrup (I like Brien Fine Maple Syrup)
Banana Filling:
6 bananas @ 6 oz. each (peeled and sliced)
4 tablespoons melted butter
Method:
Sift flour into a bowl and add eggs, milk (or water), and sugar. Mix and beat well and set aside.
Heat melted butter in a pan, add the bananas, toss until coated, and cook over medium heat until the bananas start to soften and brown. Make sure not to overcook the bananas. Dish out and set aside.
Melt a little butter in a non-stick frying pan and pour the pancake mixture into the pan and cook over medium heat until the underside is golden. Turn the pancake over and cook the other side. Transfer to a plate and fill the pancake with the banana. Fold the pancake over to enclose and top it with some berries. Drizzle maple syrup on the pancake before serving.

Now that’s a good looking crepe! You know, when I read your banana pancake post, it reminded me of the Penang banana pancake that’s sold in the coffee shop. God I love the crispy bits..*craves* Got to make some for breakfast soon! :)

This looks soooo much better than just regular pancakes! Yum! I can’t wait to try these tomorrow morning. Maybe if you use really ripe bananas (when they are turning brown), you could skip the step of cooking them in the pan and just drizzle melted butter on them instead.

I had already mashed my bananas with eggs and then discovered I was out of milk! Found and made your recipe (with blueberries and vanilla yogert on top, bananas in the batter). YUM!! Thanks for posting it!

I followed ur recipe n tried a few times but no way am I able to spread the batter so thinly to make it looks like yours! After showing my Hubby the photo of ur banana crepe, he commented,”wow! Hers is hotel standard, urs is housewife standard. ” Can u kindly share with me how to spread the batter evenly n thinly?

So sorry to hear that, what I did was quickly swirl it around the pan so it’s in a thin coat. You might want to put in less batter in the pan so it helps to spread. If you still think it’s too thick, then add a little water.

wow! this is exactly what i was looking for! Some cafes in Goa serve this with a generous slathering of nutella (chocolate spread) on top of the folded pancakes… yumyum! i’m making these tomorrow even if it’s a work day =D
