Focaccia Bread

What is Focaccia?

Focaccia is a classic Italian flatbread renowned for its soft, fluffy texture and rich flavor, thanks to generous amounts of olive oil used both in the dough and on top.

Originating from Genoa, Italy, it has gained global popularity as one of the quintessential Italian breads.

This versatile bread can be enjoyed at any hour: accompany it with your morning coffee for a comforting breakfast, serve it alongside a meal for a delightful complement to dishes, or indulge in it as a satisfying snack or appetizer throughout the day.

Its simplicity and ability to be customized with various toppings like herbs, tomatoes, olives, or even cheese make it a beloved choice across cultures and culinary preferences. Focaccia’s appeal lies not only in its delicious taste but also in its ability to evoke a sense of homemade comfort and culinary tradition wherever it is enjoyed.

This authentic Italian Focaccia recipe is incredibly simple to make. It’s completely homemade, hassle-free, and can be ready in under 2 hours. You don’t need any special skills or equipment—just a few basic ingredients and some time to let the dough rise.

Once baked, it fills your kitchen with the irresistible aroma of freshly baked bread, just like puff bread. Enjoy it warm from the oven, topped with olive oil, sea salt, and your favorite herbs like rosemary or thyme.

Its soft, airy texture and flavorful crust make it a perfect side dish for any meal or a delicious snack on its own. I love gathering my loved ones around the table to enjoy this homemade treat that brings the authentic taste of Italy right to us, reminiscent of our times in Italy!

Focaccia with olive oil and balsamic vinegar.

To make focaccia pizza, first you mix all the ingredients above to form a sticky dough. You can do it without mixer and by hand.

Transfer the dough into a baking pan and let it rise at room temperature for 60 minutes.

This is a great, easy Focaccia bread recipe. The only issue I have is that it stuck to the pan after cooking, every time. I started with a glass dish (as you used in the video) then tried metal and ceramic…no luck. I’m a pretty experienced baker and have been making my own bread for almost 20 years. So I have to line the pan with parchment paper and it comes out perfectly.

Yay, thanks so much. I am so glad you love my recipe!!! :)

  3. Mary Lou says:

How can you poke your finger in it? Mine was so sticky that when I poked my finger in the dough came with it. I ended up spraying a wooden spoon handle with non stick spray to poke the holes.
The bread turned out delicious but can you tell me what to do so I can poke holes in it. Maybe flour on my hands? Thank you. Delicious recipe and so easy.

    1. Rasa Malaysia says:

I don’t know what happened, check the video in the post/recipe card.

      1. Mary Lou says:

I did exactly what the recipe said. It tasted great but no way could I poke holes in it, the dough just came on my fingers. I might try putting flour on my hands. Any ideas? My husband loved it.

Put some olive oil on your finders into apply a liberal amount then press into bread. Water may help too but I suggest the olive oil.

    2. Donna says:

To everyone who finds it sticking and sticky. You must oil the pan very well and put oil on top too then cover and rise. Then when you poke your fingers in it it wonโ€™t stick! Also drizzle more oil on top before you bake!

    3. Ash says:

Use some oil on your hands and it wonโ€™t stick at all!

    4. Caitlyn says:

Coat your fingers in olive oil and then you’ll be able to poke holes easily! Cheers!

  4. Kaley says:

Thank you! This is my go to recipe for focaccia. I always make it when I make my Zuppa toscana. My boys and I love it! I let the bread rise in the bowl for an hour. Then another 30-45 min rise after spreading onto the oiled pan. I live in higher elevation and extreme humidity. It definitely makes it more light and fluffy for me this way. I also cook garlic and rosemary and make my olive oil for the recipe infused. Itโ€™s delicious!

This recipe is so easy. My first attempt at focaccia for my Italian husband. Tasty and fluffy moist.

  8. nat says:

Mine never got golden brown and I left in the oven for 40 minutes to try to get it golden. Sadly it just turned out pale and dry. Flavor still delish. Any ideas what might’ve gone wrong?

    1. Rasa Malaysia says:

I think it’s your oven setting.

  9. VS says:

Hey, does this recipe not have sugar or honey in the dough? I added it anyway and it turned out to be the best and easiest focaccia recipe Iโ€™ve tried!!! Love it!

    1. Admin says:

      Thanks for trying!

  10. Peter says:

Wow!! So easy, so good. Less than 20 minutes actual hands on time. Dough is sticky after rise but oiled fingers solve the poking issue. This IS a keeper.

    1. Rasa Malaysia says:

      Awesome!

      1. Susan says:

My bread stuck to my oiled pan. Still tasted good. Just didn’t come out of pan nicely.
