How To Make Beef Chow Fun Noodles

First, marinate the beef with all marinade ingredients for 15 minutes.

Next, loosen up the fresh flat rice noodles before stir-frying them in the wok. Prepare the seasoning sauce in a small bowl by mixing all the ingredients together.

Heat the oil in a wok or skillet over high heat. Add the garlic and stir-fry until light brown and aromatic. Add beef and stir-fry until they are half-cooked, and then follow with the bean sprouts, flat rice noodles, and the seasonings.

Ingredients  

  • 4-6 oz (125-175 grams) beef tenderloin, cut into bite-sized pieces
  • 1 lb (500 grams) fresh flat rice noodles
  • 2 tablespoons oil
  • 2 cloves garlic, minced
  • 1 cup fresh bean sprouts, ends trimmed
  • 1 oz (30 grams) green onion (scallion) or yellow chives, cut into 2 inches lengths

Marinade

  • 2 teaspoons soy sauce
  • 1/2 teaspoon dark soy sauce
  • 1/2 teaspoon Chinese rice wine or sherry
  • 1 heaping teaspoon cornstarch

Seasonings

  • 2 1/2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon fish sauce
  • 1/2 teaspoon sugar

Instructions 

  • Add the beef slices, soy sauce, dark soy sauce, Chinese rice wine, and cornstarch to a bowl. Marinate for 15 minutes.
  • Loosen the flat rice noodles completely to prevent them from clumping together.
  • Add all the seasoning ingredients to a small bowl and mix well. Set aside.
  • Heat the oil in a wok or skillet over high heat. Add the garlic and stir-fry until light brown and aromatic. Add the beef and stir-fry until it is half-cooked. Then add the bean sprouts, flat rice noodles, and the seasoning mixture.
  • Toss the flat rice noodles with a spatula or chopsticks until the seasonings are well combined. Continue stir-frying for another 1-2 minutes, until the noodles are slightly charred. Finally, add the green onion or yellow chives and stir-fry for another 10 seconds.
  • Turn off the heat and transfer the beef chow fun noodles to a serving platter. Serve immediately.

    Can the meat be left to marinate overnight?

      Hi Paul. It is best not to marinate the meat for more than 4 hours, as the soy sauce will start breaking the proteins down and make the meat mushy.
