Can the meat be left to marinate overnight?
Hi Paul. It is best not to marinate the meat for more than 4 hours, as the soy sauce will start breaking the proteins down and make the meat mushy.

Any tips on separating the fresh rice noodles? Every time I try they just crumble and turn to mush.
Hi Joyce, you would have to patiently separate each layer to loosen the flat noodles. It does take a bit of time, but it’s worth it.
Do you ha e to use fish sauce? Can you skip it?
