I try to eat low carb so I don’t eat potatoes but I am very interested in making the chicken in this chicken and potatoes recipe. Just want to make sure of the cooking time for the chicken. So you are saying just 4-5 minutes per side for a total of 8-10 minutes for the chicken? Or should I cook it longer since the chicken won’t get any additional cooking time since I am not adding the potatoes?
Yes you can cook the chicken longer, depending on how big they are. I use organic chicken which is very small so 8-10 mins are more than enough.
Can you tell me what Italian seasoning is, please?
Thank you,
beverley
It’s a bottled seasoning, for example McCormick Italian Seasoning. You can find it at the store.
Sounds yummy. Can I use russett potatoes?
Yes you can.
I just wanted to say that I made this dish this past Sunday and it was delicious!!
Bee in the Ingredients List you have:
1 tablespoon olive oil
1 tablespoon unsalted butter, melted
8 cloves garlic, peeled
12 oz. red potatoes, cut into wedges
1/4 teaspoon salt
3 dashes Italian seasoning
1 teaspoon fresh rosemary, roughly chopped, optional
1 tablespoon olive oil
1 tablespoon unsalted butter, melted
So there’s 2 Tablespoons of Olive Oil & 2 of the Butter?
Yes, because you cook the potatoes first and then you cook the chicken. :)
Ok thanks, I just realised the 3rd Tablespoon of oil was fr the marinade :)
Just made this! It was delicious!! I used chicken breasts and I had to cook them a little longer since they were thick. But the potatoes came out amazing and the chicken was delicious!
Thank you so much!

My family loved this dish, my husband said it was the most flavourful chicken
in the recipe, at the end you put tomatoes instead of potatoes, thought you might want to correct. Looks easy and tasty though
Oooops thanks for letting me know.
That looks amazing – thank you!
