Everyone loves Thai recipes, and this easy noodle recipe is Thai-inspired, but you don’t need to trek to Asian stores to get all the ingredients.

Quick and easy Thai noodles with a creamy and spicy Thai peanut sauce.

As the name suggests, this Thai sweet chili peanut noodles calls for only four key ingredients: noodles, Thai sweet chili sauce, peanut butter and vinegar.

It’s that simple! For the noodles, you can just use spaghetti because the smooth texture of spaghetti works so well with the creamy peanut butter sauce. What’s more, there is no heavy cooking involved, just cook the noodles, make the sauce, mix and you’re done!

To serve, garnish some chopped peanut or cashew nuts, fresh cilantro leaves, and lime wedges. Squeeze some lime juice and you will have a zesty, creamy, and absolutely delightful Thai peanut noodle dish. This is especially tasty after chilling in the refrigerator. Enjoy!

Ingredients  

  • 8 oz (230g) spaghetti
  • 3 tablespoons creamy peanut butter
  • 3 tablespoons Thai sweet chili sauce
  • 1 1/2 tablespoons apple cider vinegar
  • peanut , or cashew nuts, chopped
  • cilantro leaves , for garnishing
  • lime wedges

Instructions 

  • Cook the spaghetti according to package instructions. Once cooked, drain the spaghetti.
  • Add the peanut butter, sweet chili sauce, and apple cider vinegar to a small saucepan. Heat on low, stirring to mix well. In a mixing bowl, toss the spaghetti with the peanut sauce. Top with peanuts or cashews and cilantro, and serve immediately.

    Rice noodle is not going to work well with this recipe due to a completely different texture. You can cut down the apple cider vinegar.

    I love this recipe as does my wife, so we make it often. The other night I was on my own for dinner as she was out with the girls, and I made a batch, in which I substituted chiu chow chili oil for about half of the Thai sweet chili sauce. I usually add it to my noodles anyway, a spoon or two, but mixing it in at the start makes it more thoroughly mixed and alters the flavor a bit, more Chinese than Thai, but still very delicious. Chiu chow chili oil is one of my favorite Asian condiments.

    I’ve also considered using tahini in place of at least part of the peanut butter but haven’t tried it yet. A wonderful recipe that is not onlyl delicious but serves as a good base for experimentation!

    I made this without any modifications. It was good, but the peanut butter component was a bit too strong. Next time I’ll reduce the peanut butter by one-third.

    How about using mung bean glass noodles?
    I love noodles and Asian Food, but I can’t eat rice or other noodles without my blood sugar going sky high, but the glass noodles have only a slight affect.
    I’m trying to get my shy Thai daughter in law to help me, but she hasn’t responded well.
    My son said something like she’s imbarrassed to cook for me, because she doesn’t think she cooks good. It’s only been a year hopefully she will see I adore her and won’t judge.
