Juicy, caramelized, and cheesy air fryer tomatoes ready in under 15 minutes. Tossed with olive oil, salt, and pepper, then roasted with Parmesan on top for a simple, flavorful side dish or healthy topping for toast, pasta, or salads.
Air Fryer Roasted Tomatoes
I recently went on vacation and had the most amazing roasted tomatoes with Parmesan cheese at the breakfast buffet. They were juicy, cheesy, and full of flavor, so I decided to recreate them at home using the air fryer. These air fryer roasted tomatoes turned out just as good, soft and tender inside, lightly caramelized on the edges, and topped with a golden, savory layer of Parmesan.
They’re simple, quick, and so delicious. I love serving these air fryer roasted tomatoes with an omelette for breakfast or on top of toast for something light and satisfying. They also make a great side dish with pork (such as Garlic Butter Pork Chops), chicken (such as Baked Honey Soy Chicken), or fish (such as Pan Seared Salmon) when you want to add a touch of freshness to your meal.

These air fryer tomatoes are one of those simple dishes that go with everything. Here’s why you’ll love keeping this recipe in your rotation:
- Juicy and full of flavor. Each tomato softens and turns extra sweet as it roasts, with a golden Parmesan top that adds a little crunch and umami.
- Simple ingredients, big flavor. Just ripe tomatoes, olive oil, salt, pepper, and a sprinkle of Parmesan, nothing fancy, but the taste is restaurant-worthy.
- Versatile and healthy. Serve it with eggs for breakfast, on toast for a light meal, or alongside any protein when you want something fresh and colorful.
- Great way to use ripe tomatoes. Perfect when you’ve got extra tomatoes sitting on the counter and want something quick, easy, and delicious.

Pro Tip #1: Choose The Right Tomatoes
Go for medium-sized, ripe tomatoes that are firm but juicy. Roma or vine-ripened tomatoes work best because they hold their shape in the air fryer without turning mushy. Avoid overly soft or watery ones, as they’ll release too much liquid and won’t caramelize nicely.
Pro Tip #2: Why Olive Oil Matters
A light toss in olive oil helps the tomatoes cook evenly and brings out their natural sweetness. It also gives that glossy finish and helps the Parmesan stick better.
Pro Tip #3: Why Add Parmesan Cheese
Parmesan adds a salty, savory crust that melts and turns golden in the air fryer. It balances the tomatoes’ acidity and gives every bite a cheesy umami kick.
Pro Tip #4: Don’t Skip The Salt And Pepper
Just a pinch of salt brings out the tomato flavor, while black pepper adds a subtle heat that keeps the dish from tasting flat.
How To Make Air Fryer Tomatoes
Start by slicing your tomatoes in half.
Pro Tip: Try to pick ones that are roughly the same size so they roast evenly.
Toss the tomato halves in a bowl with a little olive oil, salt, and pepper until they’re nicely coated.
Now place them in the air fryer basket, cut side up. Give them some space so the hot air can move around and roast them evenly.
Sprinkle a bit of Parmesan on top, then air fry at 190°C (375°F) for about 8 to 10 minutes.
Pro Tip: My tomatoes were on the smaller side, so I air fried them for about 8 minutes. If yours are bigger, they might need closer to 10.
Once they’re golden and juicy, take them out, sprinkle on some chopped chives or parsley, and that’s it. Super simple and so good!
Frequently Asked Questions
You can also use cherry or grape tomatoes for a bite-sized version. Just cut them in half and reduce the cooking time by a couple of minutes.
Yes! Mozzarella gives a gooey, melty finish, while pecorino romano adds a sharper, saltier bite. For something lighter, crumble a bit of feta or goat cheese on top after air frying; they add a nice tang and creaminess.
Yes, but don’t overcrowd the basket. Cook them in batches so the tomatoes roast evenly and don’t steam each other.
They’re ready when they’re soft, slightly wrinkled on top, and the Parmesan turns golden brown. The edges might look a little caramelized, and that’s exactly what you want.
Keep any leftovers in an airtight container in the fridge for up to 3 days. You can reheat them in the air fryer for a few minutes until warm.
