Super Easy Starbucks Egg Bites

We all love Starbucks Egg Bites, and this egg bite recipe is similar, except that they are oven-baked and not sous vide so everyone can make these healthy and delicious breakfast bites.

They are oven-baked, so they can be made in advance and kept frozen. This makes them so much easier to make, with less wait time!

More importantly, they are so delicious!

They are made in the oven, so you don’t need fancy sous vide machine. They are so easy to make and even the pickiest eater would love them!

Ingredients For Egg Bites

  • Broccoli florets
  • Bacon slices
  • Eggs
  • Low fat milk
  • Salt
  • Ground black pepper
  • Sharp cheddar cheese, shredded

How To Make Bacon Broccoli Egg Bites

Whisk together eggs, milk, salt, and pepper.

Step 1. Preheat oven to 350°F (176°C). Crack eggs into a large bowl. Add milk, salt, and pepper; stir with a whisk until well combined.

Divide the broccoli and bacon evenly among the muffin cups.

Step 2. Coat 12 standard-size muffin cups with cooking spray. Divide broccoli and bacon evenly among muffin cups.

Divide the egg mixture among the muffin cups and sprinkle cheese on top.

Step 3. Divide egg mixture evenly among muffin cups. Sprinkle cheese evenly on top. Bake at 350°F for 18 to 20 minutes or until just set. Cool on a wire rack for 2 to 3 minutes; run a thin knife around edge of each egg bite to release from pan. Serve immediately.

Ingredients  

  • cooking spray
  • 2 cups small broccoli florets, cooked until crisp-tender
  • 3 bacon slices, cooked and crumbled
  • 8 large eggs
  • 1/4 cup low fat milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 oz (60g) sharp cheddar cheese, shredded (about 1/2 packed cup)

    I like the recipe a lot ! What is the nutritional value of the serving size if you use only egg whites instead of eggs ? . For the amount of eggs listed here ( 8 large eggs ) , Iโ€™ll be using 1 cup of egg whites.

    I have tried egg bites before and they were awful when they came from freezer to microwave – any thoughts on what might have gone wrong? (People that usually love my cooking thought they were awful)

      I had a similar experience with the South Beach diet breakfast quiche cups. What I finally did was to mix it up pour into muffin tins that I had placed foil cupcake liners then freze it. In the morning I would pop a couple into the toaster oven n cooked it for an hour while I get ready then I would have a hot quiche cup for breakfast!

        Yes, I think toaster oven does a better job in heating!

      Several things cannot handle full power re-heat. I have found if you heat @ 1/2 power, (level 5 or 50%) you will not notice any change in flavor. I have not tried these yet , but this seems to work for meat, so it seems to be protein that is ruined by full power heating in the microwave. I will edit this if I find it wrong when I make these.
