I love asparagus and one of my favorite asparagus recipes is sauteed asparagus. I picked up some asparagus on my visit to farmers market this past weekend and immediately made this easy and amazing lemon parmesan breadcrumbs asparagus.

I love lemon, Parmesan cheese and breadcrumbs, and they are great with asparagus.

What I love about the recipe is the simplicity, yet it adds so much texture and flavors to the plain asparagus. Every bite is bursting with the citrusy lemon juice, with a tint of Parmesan cheese. The texture is crunchy because of the breadcrumbs.

Ingredients  

  • 1 pound (500g) asparagus spears, trimmed
  • cooking spray
  • 1/3 cup Panko , or breadcrumbs
  • 1/4 cup Parmesan cheese, grated
  • 2 teaspoons lemon rind, grated
  • 1 teaspoon canola oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon kosher salt
  • 2 tablespoons lemon juice
  • 1 teaspoon unsalted butter, melted

Instructions 

  • Preheat the oven to 400°F (200°C). In a bowl, combine Panko (or breadcrumbs), Parmesan cheese, lemon rind, canola oil, pepper, and salt.
  • Arrange the asparagus on a foil-lined baking sheet and bake for 8 minutes. Sprinkle the breadcrumb mixture over the asparagus and bake for an additional 4 minutes. Remove from the oven and drizzle with lemon juice and melted butter.

    I just stumbled onto your website today and I have to say I am so impressed!! I love trying new recipes but as a college sudent I cant afford recipes that require a huge amount of ingredients, all of your recipes are so simple and almost all the ingredients are hings that I already have laying around my house.As a vegetarian I love that not every recipe involves meat! Some recipes though require oyster ,fish sauce, or oyster sauce and I dont consider those vegetarian so I would love to see in future recipes that are all veggie except for those ingredients if you could put a vegetarian alternative or say if it is critical to the dish or can be optional, just thought that would be really cool to see!! Thanks to you Im excited to start cooking again!!
