How To Grill Salmon

Summer is just around the corner and I have the best grilled salmon recipe for you. I am sure you have grilled shrimp, chicken and steak but how to cook salmon on gas grill?

I will teach you exactly how, from the cuts of salmon to use, marinade and rub to grill time. This grilled salmon is one of the best salmon recipes ever!

What Cut Of Salmon To Use

I used second cut, as pictured above. Second cut is a meaty section of salmon. The fillet is great for most cooking methods but hold up particularly well to grilling.

Salmon top loin or loin are also excellent choices.


How To Season Salmon For Grilling

For moist, juicy and tender salmon, use the following grilled salmon marinade.

  • Olive oil. It seals in the juice and moisture inside the salmon.
  • Minced garlic rids potential fishy smell.
  • Herbs such as Italian basil and parsley. Both herbs impart an earthy aroma to the fish.
  • Lemon juice.
  • Salt and ground black pepper.

Marinate for no longer than 30 minutes. The acid in the lemon juice will “cook” and turn the surface of the salmon opaque or white in color, as if it had been cooked with heat.

You can also use my homemade dry rub to rub the spice blends onto the fish before grilling. The end result will be equally delicious.

How long to cook salmon on grill? For second cut salmon in this recipe, I grilled at the temperature of 350°F, with the skin side down for 4 minutes uninterrupted. Flip the salmon over and cook for another 4 minutes. The length of time depends on the thickness of the fish.

You can also rely on visual cues. As soon as the white stuff starts to ooze or seep out from salmon, it’s cooked.

The white stuff is called albumin, or coagulated protein. Albumin gets pushed out of the muscle fibers of salmon as it cooks, rising to the surface and forming the white “gunk.”

Yes, you can! The salmon will cook beautifully and stay moist, but it won’t have the chars and smoky flavors.

Can I use a pan to grill salmon?

Absolutely. You can place the salmon on a cast-iron grill pan and place it on top of a gas grill to cook the salmon. You can also cook it on the stove top by using a grill pan.

Ingredients  

  • 1 lb (500g) salmon, top loin, loin or second cut
  • lemon wedges, for serving

Marinade:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian basil, chopped
  • 1 tablespoon Italian parsley, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 3 dashes ground black pepper

Instructions 

  • Mix all the Marinade ingredients in a bowl and stir well to combine.
  • Marinate the salmon in the marinade for 20 minutes.

  • Heat up a gas grill to medium heat, at 350°F (176°C). Remove the marinated salmon from the marinade and place it on the gas grill. Place the salmon skin side down at a 45-degree angle to form beautiful char marks.

  • Grill the salmon for 4 minutes without interruption. Turn the salmon over and grill for another 4 minutes, also without interruption. Baste with the remaining marinade mixture while grilling.
  • Depending on the type of salmon cuts you use, you may need to grill it for a longer or shorter time. The salmon is cooked when white protein starts to seep out from the inside. If the salmon is not fully cooked but has already charred, move it to the indirect heat side of the gas grill.
  • Cover the lid and cook for 1–2 minutes, or until the inside is completely cooked through. Remove from the grill and serve immediately with lemon wedges, dill sauce, or sweet chili sauce.
