French Roasted Potatoes - easy recipe with baby potatoes, onion and bell peppers. This French-style roasted potatoes is delicious and a perfect side dish!
I had this French roasted potatoes a couple of weeks ago when traveling in the islands of French Polynesia. As the name implies, the food is heavily influenced by French cooking, with local flavors fused in.
Every morning, my hotel would provide buffet breakfast with these amazing potatoes.
I love all kinds of roasted potatoes. This recipe combines onions and bell peppers, which brings amazing aromas, sweetness and peppery nuance to the dish.
The onions are nicely caramelized and the bell peppers are soft and tender, together with the perfectly roasted baby potatoes, this recipe is divine.
It’s very easy to make this dish with an active time of only 10 minutes. 30 minutes in the oven and the side dish is done.

French Roasted Potatoes
Ingredients
- 1 lb (500g) baby potatoes
- 2 tablespoons olive oil
- 1/4 onion, sliced
- 1/4 small green bell pepper, sliced
- 1/4 small red bell pepper, sliced
- 1/4 teaspoon salt
- 3 dashes ground black pepper
- 1 tablespoon chopped parsley
Instructions
- Preheat the oven to 400°F (207°C).
- Clean and rinse the baby potatoes with water, then pat them dry with paper towels. Add the olive oil to a skillet (preferably cast-iron) and heat it up. Add the onion, green bell pepper, and red bell pepper; stir and cook for 30 seconds. Then, add the baby potatoes, salt, and ground black pepper, stirring to mix well.
- Cover the potatoes with aluminum foil and roast in the oven for 30 minutes. Remove from the oven, top with chopped parsley, and serve immediately.

I just made this today. Taste good, but did not come out as crispy looking like your picture. Did I miss something? Should i have taken out the aluminum foil half way through?
Just bake longer. Yes you can take off the foil half way.

Btw, I made it and I had to fry it longer than 30 seconds to get the crisp brown in the bottom, and I used fresh chopped garlic. It came out so so great. My loves it, and my picky child ate it all! Outstanding!

It seems to me that you have left out an ingredient in the French Potatoes. The green herb in the dish. Is it parsley or coriander that you’ve tossed in to finish off the dish?
