One of my favorite ingredients in my Asian pantry is Japanese miso, which is ground soybean paste.

Easy and delicious Japanese chicken wings marinade with miso paste and honey.

Miso tastes savory, earthy, with a slight tint of sweetness.

Miso is used widely in Japanese cooking, for examples: miso soup, asari miso soup (with clams), miso ramen, miso-glazed sea bass and so much more.

Today, I am showing you how to make these sticky Japanese honey miso chicken wings.

There are a few types of miso: white miso, yellow miso and red miso.

The darker the color, the more salty it is.

I am partial to the sweeter version of white miso, which is mild and very tasty.

These sticky honey miso wings are so delicious; sweet, savory, with the taste of miso and honey. Make a bunch of these, they can be served as an entree for dinner or as an appetizer.

You can get miso at Japanese or Asian stores and some grocery stores are starting to offer them.

Honey Miso Chicken Wings

Ingredients  

  • 1 1/2 lbs (45g) chicken wingettes and drumettes
  • Salt
  • Ground black pepper
  • 3 cloves garlic, minced
  • 1- inch (2.5cm) ginger, peeled and minced
  • 3 tablespoons white miso
  • 3 tablespoons mirin, sweet cooking wine
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • White sesame

Instructions 

  • Preheat the oven to 400°F (207°C).
  • Clean and rinse the chicken wings, then pat them dry with paper towels. Season with salt and ground black pepper.
  • In a bowl, combine the garlic, ginger, miso, mirin, honey, soy sauce, and sesame oil. Whisk until smooth and slightly watery to create the marinade. Marinate the chicken in the miso mixture for 2 hours.
  • Arrange the marinated chicken wings on a baking sheet lined with parchment paper, shaking off any excess marinade. Bake for 20 minutes or until the surface is golden brown. Flip the wings and bake for an additional 10 minutes. Remove from the oven, garnish with white sesame seeds, and serve immediately.

      Yeah, it might burn because of honey, but you can try to grill on indirect heat.

      You can add Sriracha to make it spicy. Japanese recipes are not spicy. :)
