Ingredients  

Vinaigrette Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

Salad

  • 5 ounces (150 grams) 1 bag of baby spinach
  • 1 large tart apple, sliced
  • 4 ounces (125 grams) feta cheese, crumbled
  • 1/2 cup pecans, toasted and chopped

Instructions 

  • Prepare the salad dressing by whisking together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper in a bowl. Set aside.
  • In a separate bowl, combine the spinach, apple slices, feta cheese, and pecans. Add the vinaigrette dressing and toss well with a spoon. Serve immediately, topped with additional feta cheese and pecans.

    Delicious salad. I’ve been doing similar salads for years, but the spectacular dressing is new to me. I often make this with different fruit, frequently strawberries, blueberries, sliced peaches. The common elements for me are spinach, fruit, feta, and nuts (glazed pecans if I can get them). Toasted hazelnuts or slivered almonds can work in a pinch.

    You might want to check those “walnuts”, I believe they came from a “Pecan” tree.
