I love roasted carrots and made them into this super easy and crazy delicious Italian roasted carrots.
When you have very fresh carrots, you really don’t need a ton of ingredients.
This Italian roasted carrots recipe calls for only a few key ingredients: olive oil, bottled Italian seasonings, salt, Parmesan cheese and fresh oregano.
That’s all but packed full of flavors.
The bottled Italian seasonings can be found at regular supermarkets.
They add the iconic Italian nuance and aromas to the fresh carrots.
The sweetness of the carrots get a nice cheesy boost from the Parmesan cheese.
The best thing of all, active time is 10 minutes!

Italian Roasted Carrots
Ingredients
- 2 lbs. (1 kg) fresh carrots with tops
- 1 tablespoon olive oil
- 1 tablespoon bottled Italian seasonings
- 1/4 teaspoon salt
- 2 tablespoons Parmesan cheese
- Fresh oregano
Instructions
- Preheat the oven to 400°F (207°C).
- Chop off the carrot tops and peel the skin from the carrots using a vegetable peeler.
- Arrange the carrots on a baking sheet and drizzle olive oil over them. Turn and roll the carrots to ensure they are evenly coated with the oil. Sprinkle the Italian seasoning over the carrots, followed by the salt.
- Roast the carrots for 15 minutes, then remove them from the oven and sprinkle the Parmesan cheese evenly over the carrots. Return the carrots to the oven for a few more minutes, or until the cheese melts. Remove from the oven, top with fresh oregano, and serve immediately.
