After little G starts kindergarten, I have been busier than ever. He goes to a school 30 minutes drive from home and every day I am stuck in traffic for two hours, dropping off and picking him up. I have lesser time to work, let alone cook. So I turn to quick, simple and easy recipes to feed my family, like this one pot seafood pasta.
For the pasta sauce, I made it from scratch instead of using a bottled pasta sauce. I got a can of whole peeled tomatoes, blend it for the sauce. For the seafood, you can use your favorite combinations: shrimp, clams, mussels, scallops, and/or squid. It’s totally up to you. Try my one pot seafood pasta when you feel like you want to indulge the family with some seafood, it’s really amazing, especially with your favorite glass of wine!
Picky eater little G loves seafood pasta, and that is the most important thing for me. I can eat seafood every day, so this pasta fits the bill. It’s less than 30 minutes to make and only one pot to clean. More importantly, it’s healthy, delicious, and we have a pasta dish that is as good as Italian restaurants!
