We have just returned from an amazing vacation in central Vietnam. I can’t wait to share my complete experience here with you but one of the things that we thoroughly enjoyed was the food served at our hotel.

Every morning, we were treated to an amazing buffet breakfast with numerous dishes. One of the dishes that I absolutely enjoyed was the Parmesan roasted tomatoes.

Juicy, ripe and plump roasted tomatoes topped with generous Parmesan cheese. They were so good that I had to make them upon my return.

These roasted tomatoes are so easy to make, takes only 2 key ingredients: tomatoes and Parmesan cheese. The rest are pantry items that everyone has at home (olive oil, salt and black pepper).

This is the perfect season to try this recipe as gorgeous tomatoes are abundant in the market or farmers market now.

How To Make The Best Roasted Tomatoes

Easy and quick healthy Parmesan Roasted Tomatoes in a plate ready to serve.

Choose smaller tomatoes, slice them into halves, lightly coat the tomatoes with some olive oil and sprinkle a wee bit of salt and pepper.

Top with Parmesan cheese and roast them in the oven. Tomatoes are naturally loaded with umami flavors and the addition of Parmesan cheese basically elevate the fresh taste.

I especially love the bottom part of the tomatoes where the skins are slightly burned and browned.

You can serve the tomatoes with any summer dishes you make. They make everything so much more healthier and delicious.

Take a big bite of the Parmesan roasted tomato and just savor the juicy goodness. They are utterly delightful!!

Parmesan Roasted Tomatoes

Ingredients  

  • 6 small tomatoes, halved
  • 1 tablespoon olive oil
  • 1 pinch salt
  • ground black pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions 

  • Preheat the oven to 400°F (207°C).
  • Rinse the tomatoes and sliced into halves. Toss gently with the olive oil. Season with salt and pepper. Arrange the tomatoes on a baking dish, and top with Parmesan cheese. Roast the tomatoes for about 15-20 minutes or until the Parmesan cheese melted, and the top is slightly browned.
  • Remove from the oven and serve immediately.

Notes

You may use Mozarella cheese as the cheese topping.

    We make a very similar version of these but we grill ours in a tin foil boat. And use garlic salt instead of salt and pepper. We serve over rice. These will be fun to try in the oven during the winter as we often crave them!

    My Mom used to make something similar but she stuck a small piece of raw garlic in the center of the tomato before roasting which gave great flavor. I always ate my garlic but it would be easy to pick out. She also used buttered breadcrumbs (panko) on top as well. Thanks for the fond food memory.
