Fall officially starts and I can certainly feel the dip in temperature and the crisp cool air, even in sunny Southern California.

When it comes to cooler days, I rely on spicy food to warm me up, such as this utterly delicious Chipotle Lime Shrimp.

I love the smoky flavor and the stronger heat from dried jalapenos, making everything so much more aromatic and delicious.

This Chipotle Lime Shrimp is so delicious that I finished the entire skillet of shrimp myself.

Chipotle Lime Shrimp

Ingredients  

  • 1 lb. (450g) shrimp, shelled, deveined and tail-on
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon honey
  • 1 1/2 tablespoons lime juice
  • 1/2 teaspoon Chipotle Chili Pepper Powder, or more to taste
  • 1/4 teaspoon salt
  • 1 tablespoon parsley , or cilantro, chopped
  • fresh lime wedges

Instructions 

  • Rinse the shrimp under cold water, then drain and pat dry with paper towels. Set aside.
  • Heat a skillet (preferably cast iron) over medium heat and add the olive oil. Once the oil is hot, add the garlic and sauté briefly with a spatula. Add the shrimp to the skillet, stirring and cooking them. Incorporate the honey, lime juice, chipotle chili pepper, and salt, stirring to combine well with the shrimp. Continue stirring and turning the shrimp to ensure both sides are cooked evenly.
  • Add the parsley or cilantro and stir to combine well. Turn off the heat and serve immediately with fresh lime wedges. Squeeze lime juice over the shrimp before eating.

Notes

I used McCormick Chipotle Chili Pepper, which is amazing with a nice smoky flavor.

    Absolutely delicious and easy! The flavors compliment each other nicely. I didnโ€™t have the chipotle chilli seasoning so just used taco seasoning. Enjoyed in fajitas!!

    It looks delicious. I can easily see how you ate the whole pan by yourself! Can’t wait to try it. Do you prefer the Chipotle powder or are you also adding the dried Jalapenos you talked about? Where might one find dried jalapenos? My husband eats them as soon as we pick them!
